CHICKEN

 

WHOLE CHICKEN

Our favorite way to cook the Whole Chicken is to roast it in the oven. Set the oven to 400°F, remove the Chicken from the package and pat dry. The dryer the skin, the crispier it will become. (If you have time, let it dry for about an hour.) Once it’s dry, rub with a touch of olive oil, then season with salt and pepper, inside and out. Place in a roasting pan on a rack. Cook for 45 minutes- 1 hour or until the internal temp is 165°F. Let it rest for 20 minutes in a warm spot, uncovered. Carve and enjoy.

CHICKEN STOCK

Our chicken stock is made with 100% pasture-raised chicken bones. We hand-select the bones with the most marrow and connective tissue to create the ideal stock with lots of gelatin. Ingredients: chicken bones, water, carrot, celery, onion, garlic, thyme, parsley, peppercorns, bay leaves.

Use this stock in any recipe calling for chicken broth or stock, to add flavor and richness.

DUCK CONFIT

Duck confit is a product of French tradition that uses the duck legs. First the legs are seasoned with salt and herbs and then by method of confit (slowly cooking in duck fat), the meat is tenderized until it falls off the bone. At this point the legs can be stored under coverage of their own fat for several weeks. The word confit actually translates to “preserve”.

Tip: Our duck confit is already fully cooked and can easily be re-heated in the oven for a fast & simple meal.

DUCK FAT

This is the ultimate cooking fat. With its silky, rich mouthfeel, duck fat transforms anything it touches and offers a decadent flavor

Tip: Perfectly paired with potatoes, this fat has a high smoke point which aids in achieving the crispiest results.
