Our Story

 

A great butcher is the key to unlocking all of the hidden flavors an animal has to offer.

 

Chop Shop opened in 2018 as a way to serve the St. Augustine community quality meats and local produce. After the successful opening of his restaurant, Preserved in 2016 Chef Brian Whittington found it to be a natural extension of his business. Customers had been requesting to purchase house made items from the restaurant such as pickles and charcuterie meats, and Chop Shop provided a venue for them to do that. It filled a void in the community and an avenue to extend southern hospitality throughout the city.

True butchery has become a lost art, and many people have no idea how an animal gets from the pasture to plate. Our chef-minded craft butchers practice old-world methods with modern ideals while using the whole animal. Inclusive of our in-house charcuterie program, we aim to reinstate the role of town butcher preserved for generations.
